Cook Cakes In A Coffee Can Over A Campfire

You can cook more than marshmallows over a campfire.


Camping in the backcountry, the mountains or your very own backyard can be fun for campers of all ages. You can cook almost anything over an open campfire with a little practice, including cakes, fruit cobblers and other desserts. With a little planning and ingenuity, you can even bake a birthday cake for a fellow camper. Baking over a campfire is certainly different from being in your kitchen, but the sweet rewards are a refreshing camping surprise. This technique substitutes a coffee can for a Dutch oven.


Instructions


1. Empty the cake mix into bowl and break up any lumps with the fork.


2. Add the can of lemon-lime soda and mix until smooth. Do not over-mix because you want to retain the fizz.


3. Open the canned pie-filling fruit and pour into the coffee can.


4. Pour the cake batter on top of the fruit.


5. Place the coffee can on the coals. Cook for approximately 35 to 45 minutes. Check the cake at 35 minutes by inserting a fork into the cake. If the fork comes out clean, the cake is done; if not, continue cooking up to an additional 10 minutes.


6. Use appropriate oven mitts, tongs or pot holders to safely hande the coffee can and remove it from the campfire. Cool before serving.


Tips Warnings


When you remove the coffee can from the campfire, it will be extremely hot. Use pot holders or oven mitts to remove the coffee can.
